How to Change Portion Tabs & Clean the ProPortion® Handheld Dispenser

The ProPortion Handheld Food Dispenser takes the guesswork out of consistently portioning back-of-house condiments and sauces by providing six interchangeable portion tabs that are color-coded for easy recognition. The white, ½-ounce tab is preinstalled, but changing it to dispense your desired portion size can be done quickly and easily with the following steps.

Changing the Portion Tab


Step 1: Disengage the Portion Tab

Remove the handle assembly from the body, and then remove the piston and seal from the rod. Pull on the lip of the portion tab to disengage it, which will spring the handle open.

Step 2: Remove the Spring Cover

Press the rod release and slide the rod down to easily access the spring cover. Grasp the small handle on the cover and wiggle gently to assist in removing it. Once removed, the spring which holds in the portion tab will be visible.

Step 3: Remove the Portion Tab

Hold the center of the spring in place, and pull the end of the spring out of the notch in the portion tab. Pull out the portion tab.

Step 4: Insert Desired Portion Tab

Insert the new portion tab by placing the circular peg into the oval hole. Holding the tab in place, fit the end of the spring into the notch in the tab.

Step 5: Reinstall the Spring Cover and Lock the Portion Tab in Place

Snap the spring cover on by inserting the notch on the cover into the hole in the bottom of the handle assembly. Squeeze the handle to lock the portion tab in place.

Cleaning the ProPortion

To disassemble your ProPortion Handheld Dispenser for cleaning, follow along with this short video or perform these simple step-by-step instructions.


Step 1: Separate the Handle from the Body

Twist the handle off the body and rinse excess food off the seal.

Step 2: Separate Cover Components

Twist the cover off of the canister. Pull out the flow diverter and valve, rinsing off any excess food.

Step 3: Clean the Components

All ProPortion Handheld Dispenser parts can be placed in the dishwasher for cleaning.

If hand washing, use a soft sponge or cloth and hot, soapy water. Do not use abrasive scrubbers on the body or valves. Rinse all pieces fully with warm, clear water and sanitize according to local requirements.

Step 4: Thoroughly Dry All Parts

Allow all of the clean parts to air dry completely before reassembling, filling and serving from the unit.
